Smokin' the Knufman / Oliver Wedding

When the bride and the groom had to determine what they wanted for their intimate wedding reception on Mission Bay, Big Daddy Black BBQ was of course the answer!

The 75 guests enjoyed appetizers which included Smoked Stuffed Peppers, Smoked Tostada Tapas, Caprese Salad, Fruit Skewers as well as a Fresh vegetable Tray.

These were perfect starters to prepare the guests for a full "Mexican Style BBQ" complete with Carne Asada, Beef, Chicken and Cheese Tamales, Spanish Rice (cooked on the smoker) and black Bean and Corn Salad.

Even with the challenge of an outdoor remote kitchen, this event went off without a hitch. Adults and kids a like couldn't stop talking about how good the food was.

Beautiful couple, gorgeous San Diego day and quality food provided by Big Daddy Black BBQ, what more can you ask for!

It was a honor to cook for the Bride and Groom. We look forward to the opportunity to cook for them at their 50th anniversary!

Congratulations Caasy and Julie!

Big Daddy Black BBQ would like to give a special shout out to Photography By Cali for allowing us to share some of the shots taken at the wedding. Cali does amazing work. Check out her site: http://www.photographybycali.com

Date Night @ NHCF

Big Daddy Black BBQ cooked for a very special event at New Hope Christian Fellowship in Chino, CA - Date Night! On the menu was Chicken, Baby Back Ribs, and some Hot Dogs for the kids and baby sitting crew.

The event is put on to get the adults members of the Church some "adult time" for a meal and some fun afterwards.

Everyone was really excited as they arrived and saw the two smokers pumping out some incredible smells - Ribs and Chicken!

Dinner was served on time and the line went through the first helping quickly. Most of the folks came out for round two after a few minutes when they realized this was possibly the best BBQ they've had in a long time - if ever!! About 10 more people came out for thirds - the ribs glazed with brown sugar was a treat most have never tasted before.

Overall, the evening was a great success for the Date Night and Big Daddy Black BBQ!

Thanks to New Hope Christian Fellowship for having us BBQ for you! Please feel free to visit these great folks at:

EBS Summer Company Party

The Executive Business Services summer party was in full swing with Big Daddy Black BBQ catering the event. A blistering hot day in Temecula (104F) but it was a short cook. The menu included Tri-Tip, Ribs, Chicken, Baked Mac & Cheese, Corn on the Cob, and Fruit Skewers. Everyone loved the food and the event was a huge success!

"Aaron,

I just wanted to say that your food was the best and everyone in my office cannot stop raving about the food. I told everyone to make sure that they tell all their friends about you and your BBQ business. Thanks again, it was great.

Alice - Office Manager"

All food was prepped, cut, and cooked on site - this is the best way to serve fresh and tasty food!

Kyle is prepping the Tri-Tip with our special dry rub!

We brought two smokers to this event - "The" trailer with a cooking capacity of 50 square feet (that's not a typo - 50 square feet!), and the small smoker for specialty and quick items.

This was a small event so we pulled 2 of the 4 shelves to make the cook easier. Plenty of room for all the meats! We got the ribs and the tri-tip started early for a slow and low cook!

Getting close to chow time! We served up 2lbs of ABT's (Atomic Buffalo Turds) as an added appetizer - they disappeared withing 5 minutes! Here's the smoker when we added the Fatties, corn, chicken, and baked Mac & Cheese!

Getting that smoke just right!

Some new fans of Big Daddy Black BBQ - you don't make friends with salad!

A few Fatties on the grill waiting to be sliced up into little pieces of heaven!

Fruit skewers with chocolate sauce for dessert - pulled right out of the watermelon pig! We also served Pig Candy - this was a fat free event!

Nice piggy!

Ballast Point Brewing Company 13th Annual Charity Event - NTC

Ballast Point had their 13th Annual Charity Event for the NTC Foundation. Big Daddy Black's BBQ was invited to provide some fantastic BBQ for the crowd of over 1,500 people! It was a tall order but the event was very successful.

On the menu was Pulled Pork Sandwiches, Bratwurst, Chicken, Baked Beans, and Cole Slaw.

The Pulled Pork was smoked for over 12 hours on a trailered Traeger. This thing was a beautiful cooker that kept the temperature within 5 degrees with an outside temperature swing of 40 degrees.

Finished Pork Butt ready to be pulled. The knife wasn't needed!

The chicken was also smoked in the big Traeger once we arrived at the site.

The bratwurst was first boiled in Ballast Point Wahoo Wheat and then further cooked on the smaller portable Traeger Big Tex Smokers.

Here's a link to Ballast Point's Beer Page:

All the sides were made on site minutes before serving time.

The event was a great success to Ballast Point, the NTC Foundation, and Big Daddy Black's BBQ!
