Ballast Point Brewing Company Letter of Appreciation

This letter was sent to Big Daddy Black BBQ from Ballast Point Brewing Company in appreciation for participating in their successful 13th Annual Charity Event at Naval Training Center's Liberty Station.

Ballast Point Brewing Company 13th Annual Charity Event - NTC



Ballast Point had their 13th Annual Charity Event for the NTC Foundation. Big Daddy Black's BBQ was invited to provide some fantastic BBQ for the crowd of over 1,500 people! It was a tall order but the event was very successful.





On the menu was Pulled Pork Sandwiches, Bratwurst, Chicken, Baked Beans, and Cole Slaw.

The Pulled Pork was smoked for over 12 hours on a trailered Traeger. This thing was a beautiful cooker that kept the temperature within 5 degrees with an outside temperature swing of 40 degrees.

The chicken was also smoked in the big Traeger once we arrived at the site.


The bratwurst was first boiled in Ballast Point Wahoo Wheat and then further cooked on the smaller portable Traeger Big Tex Smokers.

Smokin' at the Park 2009




Meat, Inc. - the Professional BBQ Team sponsored by Big Daddy Black BBQ - competed in the 5th Annual Smokin' in the Park California State Championship this past weekend.


Meat, Inc. proudly accepted 8th Place for Chicken catagory out of 52 Teams.

About Us

Big Daddy Black's BBQ Catering was started after years on the competitive BBQ circuit. Our friends and family made the members of the BBQ team cook at every get together and event and started making comments that our BBQ was the best they have ever had. One of our friends was having a birthday party for his mother and was going to hire a catering company. After we did some math, we figured out that it would be more economical to "hire" us to take care of the food, prep, serving, and clean up. The event went so well and the food was so incredible, that several people wanted to know how to hire us for their next event. This was when we realized that we could not only do something that we really enjoyed - we could prepare and cook fantastic BBQ that people will love - and at a reasonable cost to our customers.

We offer two catering options - Drop Off Service or Full Service.

Drop Off Service is the same exact food as full service but it is prepared off site. The food is cooked and delivered 15 minutes prior to your event start time in disposable chaffing dishes including serving utensils, high quality disposable utensils, and wet wipes.

Full Service allows for an experience like no other - we bring in portable BBQ Pits or a Trailer Pit, prep all the food on site and then cook the food on site. This allows for interaction with the guests and the cooks and the unbelievable smell of the wood smoking and meats cooking. Our team has everything required except the tables and chairs for your guests. We use a high quality S.S. chafing dishes and an excellent presentation that will wow your guests.

Menu - Our menu always starts with the meats. We can provide and cook any meat you can think of. We do have set menus based on the number and style of experience you want but we are more than willing to customize the menu based on your specific requirements. The only thing we can't do is vegetarian. There is meat included in almost all of the dishes - main or side - that we prepare.

Our Staff - The Staff is organized into two elements - Servers and Cooks. The Servers are professional and will attempt to make any request a reality - and they are all BBQ enthusiasts and participate in the cooking at BBQ Competitions. Our Cooks are ALL Kansas City Certified BBQ Judges and have been Head Cooks at at least 3 Professional BBQ Competitions. All have won significant awards in sanctioned events.

The staff at BDB BBQ wants to ensure that your catering experience is exactly what you were expecting.
